



Ingredients:
2 bananas
2 eggs
3/4 cup low fat vanilla yogurt
1/4 cup vegetable oil
1 teaspoon vanilla extract
2 cup self rising flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup brown sugar
1 teaspoon ground cinnamon
1 cup rolled oats
Directions:
* Preheat oven to 385˚F. Line muffin tin with paper liners.
* Beat eggs slightly in a small bowl.
* In a large bowl, mash bananas, add the eggs, vanilla yogurt, vegetable oil and vanilla extract; combine thoroughly.
* Sift together the flour, baking soda, cinnamon and salt; add roll oats and brown sugar, then combine with the wet ingredients. Gently stir till just moistened.
* Pour batter into the prepared muffin tin. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 23 minutes.
