香滑椰汁糕 II Coconut Milk Jello


還記得, 我的第一個 post 係 香滑椰汁糕 Coconut Milk Jello (HK Style Pudding).

不經不覺原來開 blog 已經有四個幾月了. 出 post 出左(連埋 e 個)有 93 個喇~ 真係唔覺唔覺呀huh!~ ;D

今次嘅椰汁糕我用唔同嘅椰漿試吓整, 罐椰漿係泰國貨嚟架. 同埋我想試吓用 microwave 熱水座溶 d 魚膠粉睇吓會唔會好 d. 因為就咁用熱水開魚膠粉唔係溶得好匀, 有時仲會一舊舊 tim.

材料:
椰漿一罐、牛奶半杯、忌廉1/3杯、砂糖3/4杯、魚膠粉三湯匙、滾水半杯

做法:
1. 椰漿煮熱加砂糖攪匀, 再加入牛奶、忌廉, 細火煮熱。
2. 用冷開水放細碗內將魚膠粉攪匀, 大碗放半碗水叮一分鐘至熱, 將細碗放入大碗內再叮多一分鐘, 取出攪匀。
3. 加入鍋中攪拌混合, 熄火攤凍。
4. 倒入膠盒內放涼, 放入雪櫃雪實, 切件食得。

座熱水 d 魚膠粉係會溶得靚 d 架!~
記得係先用凍水將魚膠粉攪匀先, 再放入大碗熱水內叮至完全溶解先至倒入椰奶混合一齊~ or 開爐用個細煲煮 d 滾水嚟座溶都得~ ;)

椰汁芋頭炆雞鎚 Coconut Paste Chicken Drummies with Taro


材料:
雞鎚仔一pack、芋頭一包、椰漿1/3杯、水半杯、雞湯半杯、薑、蒜、豉油、糖、鹽、紹酒、生粉各適量

做法:
1. 薑、蒜切片, 芋頭解凍洗淨。
2. 雞鎚仔洗淨滴乾水, 用少許豉油、糖、鹽醃一晚備用。
3. 熱鑊落油, 爆香薑片蒜片, 加雞鎚煎至金黃七成熟, 灒酒兜匀。
4. 加入芋頭, 加水、雞湯煮滾, 用中火炆大約五至十分鐘。
5. 最後加入椰漿輕手拌勻, 煮滾, 打少許生粉芡, 搞掂。

備註:
- 芋頭我用急凍的, 方便好食, 好快炆得淋
- 椰漿要後下, 煮太耐過左火喉就唔香了

Ingredients:
1 pack chicken drummies
1 bag taro
1/3 cup coconut paste
1/2 cup water
1/2 cup chicken broth
ginger
garlic
soy sauce
white sugar
salt
shaoxing wine
cornstarch

Directions:
* Slice ginger and garlic into pieces. Defrost taro, rinse with water, drain and set aside.
* Rinse chicken drummies, drain well. Marinade with soy sauce, white sugar and salt overnight.
* Put oil in heated pan, stir-in ginger and garlic. Pan-fry chicken drummies till brown and medium well. Sprinkle in shaoxing wine, fry and mix well.
* Add taro, water and coconut paste, bring to a boil. Simmer over medium for about 5 to 10 minutes.
* Add coconut paste, gently stir, bring to a boil. Stir in cornstarch water, done.

Notes:
- Frozen taro is what I used, it's convenient and easy to cook
- Coconut paste needs to be added last, the aroma will fade if overcooked

香滑椰汁糕 Coconut Milk Jello (HK Style Pudding)


唔想食生蛋白, 又唔鐘意生粉陣味, 又唔鐘意大菜個口感, 我只想要又香又滑嘅椰汁糕!~ XD 。。。。魚膠粉出場。。。。! e 個椰汁糕, 我無落生蛋白, 無落生粉, 都無落大菜, 而又夠香夠爽夠滑! i like~ 簡單, 易做, 撈撈撈, 搞掂. 想甜 d 就落多 d 糖, 想無咁甜就落少 d lor!~ ;P

材料:
椰漿一罐、牛奶半杯、忌廉1/3杯、砂糖3/4杯、魚膠粉三湯匙、滾水半杯

做法:
1. 椰漿煮熱加砂糖攪匀, 再加入牛奶、忌廉, 細火煮熱 。
2. 用滾水將魚膠粉完全攪溶, 加入鍋中攪拌混合, 熄火攤凍。
3. 倒入膠盒內放涼, 放入雪櫃雪實, 切件食得。

Coconut Milk Jello (HK Style Pudding)

Ingredients:
1 can coconut paste
1/2 cup milk
1/3 cup whipping cream
3/4 cup white sugar
3 tablespoons gelatin
1/2 cup boiling water

Directions:
* In a medium pot, boil coconut paste. Stir in sugar. Add milk and whipping cream with low heat.
* Dissolve gelatin into boiling water. Add into medium pot, stir gently then turn off heat.
* Pour into plastic container, let cool. Put into fridge till firm. Cut into pieces then serve.
