Peppermint Candy Chocolate Brownie

Frosting:
cream cheese
powdered sugar
peppermint candy
milk
eggs
semi-sweet chocolate chip morsels
我用咗 e 隻 peppermint candy 嚟整架, 好香薄荷味!
將 d 糖 ground 碎晒佢, 然後 mix 落個 cream cheese frosting 度, 焗出嚟有 d pink, 都幾靚架~ ^^

Streusel Topped Banana Coffee Cake with Chocolate Chips


傳統 "Coffee Cake" 係無 coffee 嘅 ingredients 架~
叫佢地做 coffee cake, 係因為件 cake 係用黎送咖啡嗰陣時食嘅, 係咪好得意呢!~
個面我加咗個脆脆面, 類似波籮包個面咁, 不過係再脆 d, and 散 d~ 叫做 Streusel, a crumbly topping.

Lava Cake Chocolate Ice Cream Heaven 朱古力心太軟

lava cake + 古古力雪糕 + whipping cream + 銀色 sprinkles
浮吓浮吓咁, 有 d 坐在雲上喺天空度飄飄吓嘅感覺!~
(俾 d 想像力吖唔該!!~ ;P)
lava cake 又叫做 molten chocolate cake~
喺 trader joe's 都有得賣, 係 frozen 嘅~ 叮熱舊 cake, 自己加舊雪糕 and cream 做 plating, vio-la~ 係咪好似出街食咁靚呢?
有時間可以自己焗埋個 lava cake, 都唔係話好難, 不過要時間!!!

黑芝麻奶凍 Volcano! Black Sesame Mousse with Ice Cream and Drizzled Chocolate

用咗錐形杯裝 black sesame mousse 然後脫模, 再加舊雪糕, whipping cream 同埋古古力漿搞掂!

黑芝麻奶凍 Black Sesame Mousse

黑芝麻有益就係人都知啦~
食多 d 可以排毒美膚之外,
仲可以令頭髮更加烏黑亮麗有光澤 tim!~
Ingredients:
75g sesame powder
200g non fat milk
110g sugar
2 eggs
130g evaporated milk
330g heavy whipping cream
5g gelatin powder + 50g water

香蕉麵包 Banana Bread

真係真人不露相,
就咁樣 2010 就黎完 lu,
時間過得好快呀! 不過 d 蕉就熟得仲快 wakaka
d 香蕉熟到發黑 lu, 食又淋zi zi, 掉咗佢又好可惜..
而且我又比較鍾意食生 d 嘅蕉~ 即係仲帶有青青地嗰 d~
有人話出咗 "梅花點" 嘅蕉最好食?? 咪搞, 我已經覺得太太太熟 haha.
咁就樣... 不如黎個 Banana Bread 啦!
雖然個名叫香蕉麵包, 不過我覺得佢似蛋糕多 d!
我用咗四大隻蕉, 夠晒蕉味~
我臨入爐前喺面仲灑咗 d 粒粒糖, 出爐即食外面脆脆地, 入面又軟軟熟, 正!~
it's very easy to make 架咋!!~ 真係送禮自奉兩相宜! ^^
~食譜如下~
Ingredients:
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter(room temperature)
3/4 cup brown sugar
1/2 teaspoon vanilla extract
2 eggs
4 ripened bananas(mashed)
Directions:
*Put dry ingredients (flour, baking soda and salt) through a sifter.
* In a large bowl, beat butter and brown sugar. Stir in eggs, mashed bananas and vanilla extract until well blended. Stir flour mixture in and stir just to moisten. Pour batter into lightly greased loaf pans.
*Bake in preheated 350˚F oven for 35 minutes (for four 3x5 inch pans), or until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

提拉美蘇 Tiramisu 意大利芝士餅

Merry Christmas 呀!!~ ^^
唔知大家放假有無去邊度玩呢?
我就喺 LA 放咗個 very relaxing 同好 sweet 嘅聖誕節嘞~
e 邊 d 聖誕燈飾同 HK 係無得比 (HK 嗰 d 靚好多~), 我前嗰幾年返 HK, 都係襯一係 Christmas 一係 Thanksgiving~ Thanksgiving 十一月尾嗰時就最抵, 因為 HK d Christmas Lights 已經著晒, 而機票又無 Christmas 時咁貴, 好 miss HK 嘅 Christmas 呀!!!~
今個 Christmas 我地 e 邊都唔係話好凍, 不過就天公造美, 晴天!!
之前鍾意整生蛋版嘅 Tiramisu, 因為比較正宗, 但係經過咩咩禽流感事件, 大家一聽到生蛋就耍手擰頭, e 個係熟蛋 version Tiramisu, 咁就唔驚啦~^^
Ingredients:
5 egg yolks
3/4 cup white sugar
2/3 cup low fat milk
1 1/4 cup whipping cream
1/2 teaspoon vanilla
16 oz mascarpone cheese(room temperature)
1/2 cup strong brewed coffee(room temperature)
4 tablespoons rum
2 pack ladyfingers
1 tablespoon unsweetened cocoa powder
Directions:
*In a medium saucepan, whisk together egg yolks and sugar until well blended. Stir in milk and cook over medium heat, stirring constantly. Simmer for about one minute, remove from heat. Let it cool slightly and put into the fridge for about half an hour.
*Beat mascarpone cheese into yolk mixture until smooth.
*Beat whipping cream and vanilla with an electric mixer till firm peaks form, then add mascarpone mixture; combine well.
*In a small bowl, combine coffee and rum; put onto a shallow dish. Roll ladyfingers in coffee mixture and arrange into a pan/ container.
*Using a large ziploc bag, put mascarpone mixture in and cut a large corner of the bag out, squeeze over ladyfingers; sprinkle cocoa powder with a small sifter. Repeat layers. Cover and refrigerate overnight. Ready to serve.

1/4 teaspoon baking soda
2 teaspoons baking powder
1/8 teaspoon salt
3 tablespoons butter

3/4 teaspoon vanilla extract
1 cup milk

南瓜批 Pumpkin Pie

e 個 pumpkin pie 最啱 d 唔食 cinnamon 嘅人~
Traditional 嘅 pumpkin pie, 唔單只加咗 cinnamon, 仲會有 nutmeg, ginger, 同埋 cloves 等等好多種香料. 但係 e d 香料陣味呢, 就唔係好啱某 d "香港人". haha.. so 我改咗用煉奶 and 黃糖, 都幾香架!!~ ^^
Ingredients:
pumpkin purée
eggs
condensed milk
brown sugar
ready pie crust
個 crust, 我用咗 Ready Pie Crust 啦, 唔夠時間整咁多野嘛, 頂住檔先啦~

Chocolate Banana Cream Pie 朱古力香蕉忌廉派

Ingredients:
1/2 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 cup milk
1/2 cup evaporated milk
1 cup whipping cream
3 egg yolks (lightly beaten)
1 tablespoon butter
2 teaspoons vanilla extract
1/4 cup Ghirardelli semisweet chocolate morsels
2 bananas (sliced)
1 Ready Crust graham pie crust
Directions:
*In a saucepan, combine sugar, cornstarch and salt. Gradually add milk and cream until smooth. Cook and stir over medium-high heat until thickened and bubbly, about 2 minutes. Remove from heat; let cool for about 10 minutes.
*Add a small amount to egg yolks; mix well. Return all to the pan. Bring to a gentle boil; cook for 2 minutes, stirring constantly. Remove from the heat; stir in butter and vanilla.
*Pour half into the pastry shell; cover and refrigerate. Add chocolate to remaining custard; mix well. Cover and refrigerate for 1 hour. Do no stir.
*Arrange bananas over filling. Carefully spoon chocolate custard over all. Refrigerate for at least 2 hours. Garnish with whipped cream and ready to serve.

Semi-homemade. 無時間整餅底, 可以買現成的啦!
Keebler 隻 pie crust 都幾好用. 除左 graham crust 之外, 佢仲有其他餅底.
例如 chocolate crust, oreo crust, shortbread 等等. 適隨尊便~ 非常方便!

迷你一口芝士蛋糕 Mini Bite Size Cheesecakes

朋友新居入伙, housewarming party, 當然要賀一賀佢啦!!~
我地喺 back yard 美式 BBQ.. 諗吓整乜甜品好先... 記得主人家鐘意 cheesecake, 咁就一於整 mini cheesecake 啦!~ 一啖一個,方便唔洗切,又唔怕太飽食唔落嘛~ 仲加左 d 檸檬汁吊味無咁漏 tim~ yummy! ;D

脆皮朱古力雪糕月餅 Cookies 'n Cream Ice Cream Moon Cake

遲來的月餅. 一起來追追月吧!~
靚唔靚呀?!~ ;D

跟 blog 友 T&P 整架, 真係唔錯唔錯!~
下次試吓用咖啡味雪糕先~
做法:
1. 將適當分量雪糕取出放室溫回軟少少備用。
2. 古古力放碗內, 用微波爐 medium heat 叮幾分鐘至溶, 搞匀, 倒入模中 "long" 幾個圈, 等 d 古古力平均分佈, 然後將個模倒轉, 將 d 多左嘅古古力流番出黎, 再用刀刮平模邊, 放入雪櫃雪硬。
3. 用匙羹將雪糕畢入模中, 再放入冰格雪實然後取出, 再加層古古力溶液做底, 同樣放回冰箱再雪一陣, 脫模上碟食得。

用左 silicone 軟 mold, 比較好脫模.
面頭仲要加層古古力~
今次用嘅係盛產於三藩市嘅 Ghirardelli semi-sweet chocolate!

豆沙忌廉芝士杯 Cream Cheese Mousse with Red Bean Paste

鍾意食 cheese cake 又鍾意食紅豆嘅朋友, 一定鍾意食 e 個豆沙忌廉芝士杯~
係有 d fusion 味道架!!~ 中西合壁, 天下無敵 ;P
材料:
豆沙蓉一杯
忌廉芝士16安士
淡忌廉一杯
脫脂奶兩湯匙
砂糖 3/4 杯
雲尼拿香油一茶匙
魚膠粉三茶匙
水四湯匙
做法:
1. 先將忌廉芝士放室溫半小時回軟備用。 淡忌廉打起備用。
2. 魚膠粉用水開匀, 再座熱水攪至完全溶解。
3. 豆沙蓉畢入小杯或鍚紙兜。
4. 忌廉芝士加砂糖用電動打蛋器打至幼滑, 加入脫脂奶&雲尼拿香油打匀, 再加魚膠水打匀。
5. 用膠刮刀將已打起之忌廉加入拌勻, 畢入小杯或鍚紙兜, 面再加上適量裝飾, 放雪櫃雪幾個鐘食得喇。
我 e d 懶人, 豆沙我緊係買現成的啦~ 方便唔洗自己煮.!!

朱古力米通脆脆 Cocoa Rice Crispy Treat

好味, 又易整到爆!~ ;P
唔洗五分鐘搞掂.
Ingredients:
8oz (about 3/4 bag) Kraft mini marshmallows
1/3 stick of unsalted butter
6 cups Kellogg's Cocoa Rice Krispies Cereal
* Melt butter in a large saucepan over medium heat. Add marshmallows. Stir until marshmallows melted. Turn off heat, quickly mix the Cocoa Rice Krispies Cereal in; combine well.
* Spread mixture into a square/ rectangular pan using a spatula. Cut into pieces. Done. How easy is that.


同埋 e 隻 mini marshmallow~
