材料:
茄子、絞豬肉、魚香醬、蔥、薑、水、豉油、糖、鹽
做法:
1. 茄子切段, 薑切片, 蔥切段; 豬肉用豉油、糖、鹽醃一陣備用。
2. 熱鑊落油, 將茄子兩面煎至微黃, 兜起備用。
3. 燒熱鑊, 爆香薑片, 放豬肉, 用鑊鏟將豬肉弄碎, 煎一分鐘, 放魚香醬, 兜匀。
4. 茄子回鑊, 落一杯水, 加蓋用中火炆煮七分鐘左右至熟透, 加少訐蔥花, 搞掂食得。
