Very Berry Muffin
Berries not only are beautiful, they are wonderful and delicious as well. From strawberries, blueberries, raspberries, to blackberries. All berries are great for you as they are full of minerals, vitamins and other nutrients! Got some frozen berries in the freezer and thought of some yummy muffins.. heehee.. You can use either fresh or frozen berries for muffins. Both work!
Ingredients:
* 2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1/2 cup butter
* 3/4 cup white sugar
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 cup milk
* 1 cups mixed berries (blueberries, raspberries, blackberries)
Directions:
1. Grease muffin pan or line with paper muffin liners.
2. Combine flour, baking powder, and salt in a medium bowl.
3. In a large bowl, beat butter with sugar until light and fluffy. Beat in eggs, stir in milk and vanilla extract.
4. Fold in dry ingredients and lastly the berries (fold gently, don't stir). Spoon batter into prepared cups.
5. Bake in 375 ˚F preheated oven for about 20 minutes. Remove from oven, leave muffins in pan for 10 minutes then cool on wire rack. Done!
